Apple Pie Pops & Sparkling Harvest Punch {Low Sugar!}

Hello from the BIG APPLE! I’m here for a couple days to work on a project with NECTRESSE® Natural No Calorie Sweetener, who I’ve teamed up with this holiday season to develop and share some creative holiday entertaining tips, including recipe ideas that are sweet like we love, but also lower in sugar! That’s exactly what NECTRESSE is about – it’s made from a perfect blend of natural sweeteners and monk fruit extract, so it sweetens things up without all the extra calories of sugar.

And speaking of apples, one of my favorite recipes (which I’ll actually be sharing with some news and morning programs today) is Cinnamon Apple Pie Pops Recipe, which is pictured above. These little pops are so cute and make for a great homemade holiday gift idea or addition to a holiday dessert spread. If you’ve never made pie pops before, I think you’ll be pleasantly surprised at how easy they are!

The other recipe I’m excited to share today is a Sparkling Harvest Punch, which is made with spiced tea, cinnamon, a variety of juices and fruit. Club soda adds a lot of sparkle and allows us to cut back significantly on the amount of juice used, and NECTRESSE sweetens it without all the extra calories of added sugar! This recipe is really tasty and kind of feels like a non-alcoholic sangria, so it’s a great option for the whole family… but of course you can easily turn it into a festive cocktail for adult guests by simply adding a splash of spiced rum!

Apple Pie Pops & Sparkling Harvest Punch {Low Sugar!}

Cinnamon Apple Pie Pops

(makes 20-24 pie pops pops)

Ingredients:
3 large apples, finely diced
2 Tbsp butter, melted
2 Tbsp (12 packets) NECTRESSE®
1 Tbsp flour
1/2 tsp cinnamon
1/4 tsp salt
2 packages refrigerated, rolled pie crust
Egg White Wash (1 egg white)
Extra NECTRESSE® for sprinkling (optional)

Tools:
2.5″ circle cookie cutter
parchment paper

Directions:
Preheat oven to 425° F and line baking sheets with parchment paper.
Mix together diced apples, melted butter, cinnamon, flour, salt and NECTRESSE. Set aside.
Using a circle cookie cutter, cut out small circles from the refrigerated pie crust.

Assembling the Pie Pops:
1. Wet your finger with water and wet the edges of a dough circle.
2. Place a lollipop stick in the center of the circle, then top with 1 Tbsp of apple filling.
3. Wet the edges of a second circle, and place this circle on top of the first, wet edge down.
4. Seal the 2 circles together by crimping all the way around with a short piece of a pie pop stick.
5. Brush with egg wash. Sprinkle lightly with NECTRESSE® for extra sweetness (optional).
6. Place pops on a baking sheet. Bake for approximately 12 minutes or until golden. Let cool.
7. Tie a cute ribbon on the sticks (optional), serve & enjoy!

Apple Pie Pops & Sparkling Harvest Punch {Low Sugar!}

Sparkling Harvest Punch

(makes 8 servings)

Ingredients:
2 cups water
2 spiced black tea bags
2 cinnamon sticks
2 Tbsp (12 packets) NECTRESSE®
3 cups pomegranate juice
1 cup orange juice
2 small oranges, sliced into wheels
1 lemon, sliced into thin rounds
1 red apple, cored and cut into 1/2-inch cubes
3 cups club soda

Directions:
Boil water. Add tea bags and cinnamon sticks and steep for 5 minutes. Remove tea bags and cinnamon sticks and stir in NECTRESSE until dissolved.

In a large jar or pitcher, combine tea, pomegranate juice and orange juice. Next, stir in orange wheels, lemon wheels, and apple pieces. Refrigerate for a minimum of 2 hours, or preferably overnight.

Just before serving, add club soda. Serve over ice.

This recipe may also be used as a mixer.

It’s burlap with gold polka dots! We got it from Joann Fabrics, you can find it here. We’ve been using it in so many things lately, it’s just so fun ;)
