Celebrate the end of summer with a sweet twist – and one that’s extra easy and LIGHT, I might add! I recently partnered with NECTRESSE® Natural No Calorie Sweetener to come up with a “summer inspired” dessert that’s tasty and carefree (in other words easy to make + “guilt free”)… and I hope you enjoy these No Bake Blueberry Custard Cups as much as my friends and I did! I think they look extra cute with the printable party flags available for free download below. ;)

Light, No-Bake Blueberry Custard Cups
(makes 4 servings)
– 4 tbsp light butter
– 8 graham cracker squares (2″), crushed & divided
– 2 tbsp water
– 1 tbsp cornstarch
– 2-1/2 tsp NECTRESSE®
– 1/4 tsp cinnamon
– 1 tbsp lemon juice
– 2 cups fresh blueberries
– light whipped topping
– 4 custard cups or small mason jars
Melt butter in a small glass bowl – microwave on high for 30 seconds. Add 1/2 of the crushed graham crackers and toss to coat. Divide the crumb mixture evenly across 4 custard cups. Microwave the cups on high for 1 minute or unit set. Let cool.
In a medium glass bowl, whisk together water, cornstarch, NECTRESSE, cinnamon, and lemon juice. Add blueberries and toss to coat. Microwave the mixture on high for 4-1/2 minutes (or until mixture thickens), stopping to stir every 1-1/2 minutes. Remove from the microwave and let cool.
Spoon blueberry mixture evenly across the 4 custard cups. Cover and chill until ready to serve.
Immediately before serving, spoon a generous dollop (approx 2 Tbsp) of light whipped dairy topping onto each blueberry custard, then sprinkle with the remaining graham cracker crumbs, dispersing the crumbs evenly across the 4 cups. Enjoy!
