POP {and Sip & Spoon} the Bubbly

Braised Mixed Berry Compote

Makes about 3 cups

3 Tbsp. unsalted butter
1/4 Cup packed light brown sugar
2 Tbsp. fresh lemon juice
2 Tbsp. Korbel Sweet Rose Champagne
3 Cups mixed berries (3/4 lb.) such as raspberries, blackberries and blueberries.

Melt butter in a skillet over moderate heat.  Stir in brown sugar, lemon juice and champagne until sugar is dissolved.  Add berries and cook, tossing gently (try to keep most of them from breaking up) until berries are warm and juices begin to be released (2 or 3 minutes.)

Serve warm or at room temperature over ice cream or pound cake.

Korbel Passion Fruit Mimosa

4 oz. KORBEL Champagne
1 tbsp. Grand Marnier liqueur
3 tbsp. passion fruit juice or nectar blend

Combine Grand Marnier and juice. Top with KORBEL. Garnish with an orange peel twist.
